Cooking:

  2. Place the turkey breast on the rotisserie spit and secure it according to your rotisserie’s instructions. Ensure it is balanced to rotate smoothly.

  • You don’t need to truss the turkey breast for indirect grilling, but it can help maintain shape.

Cooking:

  1. Preheat your grill for indirect grilling by lighting the burners on one side of the grill to a medium-high heat, or arranging the coals to one side if using charcoal. The goal is to create a cooler zone where the turkey can cook without direct heat underneath it.
  2. Place the turkey breast on the cooler side of the grill, away from the direct heat. Close the lid to create an oven-like environment.
  3. Cook the turkey breast for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (74°C). Since there’s no direct heat underneath the turkey, you can baste it occasionally with its juices or a marinade to keep it moist.
  4. Check for doneness with a meat thermometer, then remove the turkey from the grill and let it rest for 10-15 minutes before slicing.

Additional Tips:

  • For both methods, keeping the lid closed as much as possible helps maintain a consistent temperature.
