How to cook a sausage on the barbecue:

  1. Preheat the Barbecue: Start by preheating your grill to a medium heat. This helps in cooking the sausages evenly. For charcoal grills, the coals should be white-hot; for gas grills, a medium setting works best.
  2. Prepare the Sausages: If your sausages are linked together, cut them apart. To prevent them from bursting on the grill, you can lightly score or prick the sausages with a fork. However, be cautious with this step as too many holes can cause the sausages to dry out.
  3. Oil the Grill: Lightly oil the grill grate to prevent sticking. You can do this by dipping a paper towel in cooking oil and using tongs to rub it over the grate.
  4. Grill the Sausages: Place the sausages on the grill over indirect heat. This means you should place them around the edges of the grill, not directly over the coals or flames. The indirect heat will cook them through without burning the outside.
  5. Turn Regularly: Use tongs to turn the sausages regularly to ensure they cook evenly on all sides. This also helps prevent any one side from getting too charred.
  6. Monitor the Temperature: The internal temperature of the sausage should reach 160°F (71°C) for pork and beef sausages, or 165°F (74°C) for chicken or turkey sausages. You can check this with a meat thermometer inserted into the end of the sausage.
  7. Rest Before Serving: Once cooked, let the sausages rest for a few minutes off the grill. This allows the juices to redistribute, making the sausage moist and flavorful.
  8. Serving: Serve your grilled sausages on a bun with your favorite condiments and sides, or chop them up and add them to another dish.
